Lightly steam a bunch of very young buds
Drizzle little butter
Squirt bit of lemon juice
Pick them when just emerging, once they have started to unfold it's too late.

I'm not sure I want to know what happens if you do this "too late". I know nettle is commonly eaten too but there is a family story about some friend's who tried to make nettle soup and the whole family hallucinated that night. Maybe they threw in some wild mushrooms too, who knows.
